Makes 12 / 120 cal each
Ingredients
1 cup self raising flour
1 cup desiccated coconut
3/4 cup caster sugar
3/4 cup Rice Milk (I used light milk as I had no rice milk)
1 tsp cinnamon
Method
1. Preheat oven to 180 degrees.
2. Line a cup cake tray with cases
3. Beat everything together and use a soup spoon to distribute across the 12 cupcake cases. Bake for approximately 10 minutes, or until a fork comes out clean.
